CHICKEN WITH MUSHROOMS
Sauté: 2 tbs butter
½ lb chopped mushrooms
1 med chopped onion
½ tsp minced fresh ginger
1 clove minced garlic
Cook until very soft and liquid has evaporated.
Add: 1 tsp soy sauce
Fill 6 cut chicken breasts with 2 tbs mushrooms.
Brown: chicken breasts in
3 tbs butter
Add: 6 large mushrooms
½ tsp minced fresh ginger
1/3 c sake, dry sherry or water
1 c chicken broth
1 ½ tbs soy sauce
½ tsp sugar
½ tsp vinegar
Cover & simmer 7 minutes. Turn.
Cover; simmer until thick meat is not pink; 3 min.
Mix: 1 tbs cornstarch
2 tbs water
Stir into pan juices.
Bring to boil, stirring.
