SOUR CREAM APPLE PIE


SOUR CREAM APPLE PIE
Silver Palate.


Mix:                    ½ c flour
5 tbs sugar
¾  tsp salt
¾  tsp cinnamon
Cut in:                       6 tbs butter
6 tbs shortening chilled
Add:                         4-6 tbs apple juice or cider

Roll out ½ of dough and line a pie pan.

Mix:                          2/3 c sour cream
1/3 c sugar
1 egg
3 tbs flour
¼ tsp salt
1 tsp vanilla
Add:                         5-7 apples
Line pie shell.

Mix:                          3 tbs brown sugar
3 tbs white sugar
1 tsp cinnamon
1 c chopped walnuts

Top apple filling and cover with crust.

Bake at 350' for 55 - 65 min.

 If crust browns too quickly, cover with foil.

PUMPKIN PIE


PUMPKIN PIE


Mix well:                                          2 c pumpkin
1  can evaporated milk
½ can rich cream
¼ c brown sugar
½ c white sugar
½ tsp salt
1 tsp cinnamon
½ tsp ginger
¼ tsp nutmeg or allspice
1/8 tsp cloves
2 slightly beaten eggs

Pour into pie shell.

Bake 15 min at 425’F.

Reduce heat to 350’F and bake 45 min.

Done when an inserted knife comes out clean.

PIONEER PASTRY RECIPE


PIONEER PASTRY RECIPE

2 ½ c sifted flour
1 c shortening (the pioneers used lard)
½ tsp salt
1 egg, beaten
1 Tbs vinegar
 Cold water

Cut shortening into flour and salt.
Beat egg lightly and add vinegar and 5Tbs (or more if needed) cold water.
Handle dough lightly and as little as possible.
Makes 2 – 9” pie shells or 1 double crust pie.

Old Fashioned Cinnamon Rolls


Old Fashioned Cinnamon Rolls


8-10 cups flour
1 cup non-fat powdered milk
1 cup instant mashed potato flakes
1 cup sugar
2 tsp salt
2 medium eggs
1/2 cup butter or margarine, melted
3 1/2 cups warm water
2 Tbsp instant yeast

Cinnamon/Sugar Mixture
1/2 cup brown sugar
1/2 cup white sugar
1 to 2 Tbsp cinnamon (to taste)

Pulse in blender until mixed thoroughly.




Combine 2 3/4 cups flour, powdered milk, potato flakes, sugar and salt in mixer bowl.
Mix on speed 5 for 10 seconds.
Add eggs, butter or margarine, and water and mix 10 more seconds on speed 5.
Add the yeast and continue mixing on speed 5.
Gradually add remaining flour until dough clears the sides of the bowl.
Stop adding flour and press the Auto Knead button.

Empty dough onto the oiled counter and let rest for five minutes.

Divide dough into two pieces.
Roll the first piece into a rectangle 18” x 15” x 3/8” -1/2”
Brush dough with 2 tablespoons softened butter and sprinkle with 1/2 cinnamon/sugar mixture.

From the longer edge, roll the dough and pinch to seal the edge.

Cut 1 1/4 “ slices. Place on greased or parchment covered pan. Repeat with the second portion of dough.


Allow to rise 30-45 minutes in a warm area.

Bake at 350 degrees Fahrenheit for 15-20 minutes.

Allow to cool for 5 minutes before frosting.

Makes 30-36 cinnamon rolls.



Frosting
2 cups powdered sugar
3 Tbsp butter or margarine, softened
1/2 tsp vanilla or almond flavoring
3 to 4 Tbsp milk or cream

Mix with French Whisks on speed 3 for 30 seconds.

Adjust liquid or sugar to get desired consistency.

TANGY LEMON DESSERT SAUCE


In 1 qt saucepan melt ½ c butter butter over low heat. 

Stir in:                            1 c sugar
3 tbs water
2 tbs lemon juice
1 tbs grated lemon peel

Stir in:                            2 beaten eggs


Cook over med. heat, whisk constantly, until thickened (5-7 min). 

Serve warm over gingerbread, ice cream, pound cake, etc. 

Makes 2 cups.

Mix:                                 1/2 c butter
8 oz softened cream cheese
1 1/2 c pwd sugar
1 tsp vanilla
1 egg yolk


Can freeze.

Great in strawberries.

Berry Sauce

2 c. fresh strawberries or raspberries
1/2 c. sugar
1 tbsp. lemon juice
1 tbsp. corn starch
1/2 c. bourbon
Cook berries and sugar over low heat until sugar dissolves. Mix lemon juice and corn starch together; add to fruit. Cook until sauce is clear, stirring constantly. Add bourbon.Chill and store in refrigerator. Use over fresh berries, ice cream or cake.

Leftover Rice Pudding



Ingredients



How to make itCombine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins. Cook until just about all of the milk is absorbed (20-45 minutes, depending on how absorbent your rice is). Stir in cinnamon and/or nutmeg, if using.

  • Divide rice pudding into individual serving dishes serve warm or chilled.
